Bubbly Cake With Mixed Berries

 


My dearest friend Fonda brought us a bucket full of red and black berries which gave us the idea why not to bake a cake.

Bubbly Cake is one of the coolest cakes commonly known in Czech Republic or Slovakia. My sons love to make this sponge cake. They call it Bubble Cake. It is ideal for my oldest fussy eater. It is a great breakfast meal and goes well with tea or coffee. The preparation does ‘not take more than 30 minutes. The ingredients are not special, just the most used baking stuff plus some fruit. You do not have to collect fresh berries. The canned or frozen fruit works well too. There is not necessary to use berries, because the alternative version with peaches is very yummy as well. The pastry is very similar to basic sponge. This cake is absolutely easy to make. Let your creativity do the rest. To be more precise, there is what you will need:

 

Ingredients

2 cups of all-purpose flour (plain flour)
– use usual tea mug (roughly 200 ml)
1 cup of granulated sugar
1/2 cup of oil (sunflower oil or rapeseed oil will do the job)
1 cup of milk (I like whole milk, but the semi-skimmed milk works well too)
2 eggs (medium-sized )
1 tbsp of baking powder
fruit (blueberries or red currants or other fruit)
vanilla extract
Method
1) Grab a large bowl and mix dry ingredients – sugar, flour, baking powder.
2) Then you add eggs, oil and the milk.
3) Mix all the ingredients well together until smooth and fluffy.
4) Prepare your baking pan. Slightly oil the bottom (or use butter to create a non sticky layer) and dust with flour. You will be able to remove the finished cake from the pan with ease.
5) Pour the cake mixture in the pan. Evenly and whatever fruit you have at home. A good idea is slightly push the fruit to the surface.
6) Place the baking pan with your cake in the oven and bake for 25 min – 180°C. To make sure you have baked your masterpiece through you can check the cake with a toothpick. Stuck it in the cake and when comes out clean, your creation is done.
7) When you remove the cake from the tray I would recommend to wait for a while and then pour some icing sugar on top. Goes down well with a cup of your favourite brew.
