Easy smarties cupcakes: And how to make them a home
Smarties Cupcakes Recipe. Very easy to bake at home.
The kids will love them!!!
300g caster sugar
250 ml milk
225g plain flour
1 teaspoon bicarbonate of soda
50g cocoa powder
For the chocolate frosting:
140g plain chocolate, 70% cocoa solids
125g sifed icing sugar
1 teaspoon vanilla extract
Preheat your oven to 180°C. Place 20 paper cupcake cases in 2 x 12 hole muffin tins. Beat the butter and sugar in a mixing bowl until soft and creamy. Beat in the eggs and milk.
Sift in the flour, salt, bicarbonate of soda and cocoa and stir well to mix. Spoon the mixture into the cupcake paper cases. Bake for about 15 – 20 minutes until a skewer inserted into the centre comes out clean. Remove from the tin and place on a wire rack to cool them Meanwhilcompletely.
For the chocolate topping, bring water to a simmer in your pan. Break the chocolate into a heatproof bowl over a pan of simmering – not boiling water. Remove from the heat and cool the melted chocolate to room temperature.
Meanwhile beat the butter with an electric whisk until smooth and creamy. Add the icing sugar and beat until the frosting is light and fluffy. Beat in the vanilla and melted chocolate and beat on low speed until incorporated and fluffy. Increase the speed and beat until the mixture is smooth and glossy.
