Linzer Cookie Recipe
With Christmas behind us, some seasonal threats I make more often during the year. Just because my boys love eating good cookies. Cheaper than those from the supermarkets, but most importantly, you will not find unhealthy preservatives there. Usually made before Christmas, but tastes lovely every time you want to enjoy a lovely cup of tea. I would like to share this simple linzer cookie recipe with you.
Ingredients
400 plain flour
200 butter
100 icing sugar
3 yolks
grated lemon zest from 1 lemon
strawberry or raspberry jam
Method
Sift the flour and combine with softened butter, yolks, sugar, and grated lemon zest. Shape the dough into 2 discs (the dough will be soft), wrap and chill for 2 hours. Roll out the disc on a lightly floured surface about 2 mm and cut out cookies using any cutters you desire. Place cookies on the baking tray lined with parchment and bake for 10 min on 200 °C. Cool the cookies on the tray before filling with the jam. Let them set for about an hour before storing in an airtight container. Enjoy 🙂
