Two Tiered Star Wars Birthday Party Cake
– With Custom Made Cake Topper –
(Chocolate and walnut sponge with boiled chocolate buttercream and boiled walnut buttercream)
My mum always makes us numbered cake for our birthdays, but this year I wanted a two tiered cake because I didn’t want a number 9 cake . I chose the Star Wars Birthday Party Cake topper design, because my favourite Star Wars character is Anakin Skywalker (Darth Vader) and his Jedi Master is Obi- Wan Kenobi.
Sponge:
280 unsalted butter, really soft, plus more for the tins
280g self rising flour
1 ½ baking powder
5 eggs slightly beaten
280g caster sugar
Boiled Chocolate buttercream
5 eggs
10 tbsp caster sugar
5 -5 tbsp cocoa
2 x 250g butter
Boiled Walnut Butter Cream
3 eggs
6 tbsp caster sugar
8tbsp grounded walnuts
250g butter
Preheat the oven to 180 cel . Butter two 20 cm and one 15 cm round cake tins and line the bases with baking parchment. Sift the flour and baking powder into a bowl, add butter, eggs, sugar and beat until well blended. Make the cake batter and divide it into two batches – divide mixture between the bowls – one smaller bowl for 15 cm cake tin.
Fold cocoa paste (mix the 6 tbsp cocoa powder with 4 tbsp very hot water and stir to make a paste. Set aside to cool. ) and spoon into to 20cm tin. Level the top and bake for 30 – 35 minutes, or until a skewer emerges clean. Remove from the oven, leave for a few minutes. Run a knife around the rims and turn the baked sponge on to wire racks. Remove the paper and let cool.
For the 15cn cake fold 3 tbsp of grounded walnuts into the ainig batter and spoon into the tin and bake.
For the boiled butter cream put the eggs, sugar and cocoa or walnuts into a heatproof bowl set over a pan of hot water and whisk until thick. Leave to set in a cool place and when cooled mix it with the butter.
If necessary trim the cakes level. Split the cakes in halves or three or four levels (as desired) and turn flat sides up and sandwich them with buttercream. If you prefer you can spread with jam first and then buttercream. Spread the remaining buttercream all over both cakes and stack the cakes above ontop with the help of spatula.
